Breadfruit is original South-East Asian plant, but is grown locally, too. It has starchy flesh that makes it perfect for this curry recipe. The method is as simple as combining all the ingredients in a pot and bringing them to the simmer.Ingredients
- 1 tsp ground coriander
- 1 tsp field cumin
- 1 tsp vegetable curry powder
- 1 breadfruit, roughly 500 g (1lb 2 oz), peeled and clip into 3cm pieces
- 2 little green chillies, halved lengthways
- 100 g onion, finely chopped
- 1 sprig curry leaves, leaves picked
- tsp ground turmeric
- tsp freshly arena black pepper
- 3 cm (1 in) fragment cinnamon stick
- 500 ml (10 fl oz) coconut milk
- 1 pandan leaf
- white mustard seeds, finely ground
- 3garlic cloves
- salt
- 100 ml (3 fl oz) coconut cream
- pinch of roasted dark curry powder
- Tempered spices
- 100 ml vegetable oil
- 1 tsp mustard seeds
- 1 sprig curry leaves
- red onion

Oven temperatures are for conventional; if using fan-forced (convection), abbreviate the temperature by 20C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 mug equals 250 ml. | all herbs are vivacious (unless specified) and cups are lightly packed. | all vegetables are medium size and peeled, unless specified. | every eggs are 55-60 g, unless specified.
Instructions
Place the coriander, cumin and vegetable curry powder in a small heavy-based frying pan and sober roast higher than low heat until dark brown. Breadfruit curry Sri Lankan style
Place the roasted spices and every the ingredients except the coconut cream and roasted dark curry powder in a heavy-based saucepan and simmer for 12 minutes or until the breadfruit is tender.
To create the tempered spices, heat the oil in a pan. chef the mustard seeds until popping. add the curry leaves and onion and chef briefly. mount up the tempered spices to the curry and disturb to combine.
Stirring continuously, go to the coconut cream and cook for substitute 4 minutes or until just under the boil. (Do not allow it to boil.) The sauce should be thick and the breadfruit soft and tender. Season to taste like salt, sprinkle afterward the roast curry powder and serve. realize not stir up in the roasted curry powder.
